    Inspired by a heartfelt presentation from anchor Robin Roberts, several Redskins wives on Monday took part in a community event preparing care packages for domestic violence victims.

    “Optimism is a muscle that gets stronger with use.”

    That was the main message parlayed Monday by Good Morning America anchor Robin Roberts, who inspired dozens of NFL spouses at the league’s annual meetings at the Arizona Biltmore in Phoenix.

    (makes 8 servings)

    INGREDIENTS:

    • 24 lemon rind (strips)
    • 8 tbsps limoncello (liqueur)
    • 4 tsps fresh lemon juice
    • 750 ml champagne (brut, chilled)

    Ingredients

    3 tablespoons barbeque sauce

    4 small boneless, skinless chicken breast halves (1 pound)

    2 small unpeeled red potatoes, thinly sliced

    1 red or green bell pepper, seeded and sliced

    1 green onion, finely chopped

    1/4 teaspoon salt

    1/8 teaspoon black pepper

    1 1/2 cups reduced-fat Cheddar cheese, shredded
