I love anything with oats. So one day I set out to make a healthy granola bar. But, my impatience got the best of me and I tried to cut and eat them before they cooled. Although it wasn’t one of my proudest culinary moments, it turned into something fantastic –an addictive chunky granola. Although this recipe calls for gluten-free oats, you can replace them for the regular variety!
4 1/2 cups gluten-free whole oats
1/2 unsweetened shaved coconut
1/3 cup sunflower seeds*
1/3 cup pepita (pumpkin) seeds*1/3 cup raisins*
1/3 cup mini chocolate chips*
1/3 cup brown sugar
1/2 cup canola oil
1/4 cup maple syrup
1/4 cup honey
1/2 teaspoon salt
1 teaspoon vanilla extract
* TIME SAVER HINT: Don’t have all these ingredients? No worries! Swap them out for 1 1/3 cups of a nut-free seed mixture such as Enjoy Life Not Nuts Seed and Fruit Mix.
Preheat oven to 325. Line a 9x13 inch baking sheet with parchment paper and spray with non-stick oil.
In a large bowl, combine oats, shaved coconut, salt and brown sugar. Mix well.
In a small bowl, add oil, honey, maple syrup and vanilla using a whisk or a fast moving fork to combine until blended.
Pour oil mixture into oat mixture and combine thoroughly until oil mixture is distributed evenly throughout the oats.
Spread evenly into the baking sheet and press down with a flat spatula until the oats are packed tight.
Bake for 35-40 minutes. Remove from oven and let the granola cool for 15 minutes.
Break up the mixture with a spoon let cool it for another 30 minutes (or until it reaches room temperature).
Store in an airtight container and enjoy!
