Homemade Chunky Marinara Sauce

As the head mom cook of a family of six, I often purchase store bought marinara sauce, but today I had something rare, extra time and tomatoes.  Since many store-bought sauces contain sugar, this is an excellent and healthy way to bring a touch of Italy in to your kitchen.

 Ingredients

4 cups diced tomatoes, keeping all juice*
1 large onion, chopped
3 cloves of fresh garlic (or 2 teaspoons canned minced garlic)
1 tablespoon olive oil
2 tablespoons basil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

* Can substitute a 28-ounce can of diced tomatoes

Directions

 1. Heat olive oil in a skillet and sauté onion over medium heat until translucent. 

2. Add garlic and cook for 30 seconds to bring out the flavor.

3. Add tomatoes, basil, salt and pepper, cover and simmer on the low heat for 20 minutes.
