This week, I had an incurable craving for something salty, sweet and creamy. With Thanksgiving coming up, there will be a lot of opportunities to indulge. So I’ve been working hard to stay on the healthy eating track. These Mediterranean Stuffed Tomatoes did the trick. Hope you enjoy them as much as I did.
12 Cocktail tomatoes
¼ Cup Feta cheese
10 Kalamata olives (or black olives)
1. Wash tomatoes. Slice off tops just enough to create a flat surface. Then scoop out the inside, going only half way into the tomato and set aside.
2. Finely dice cucumbers, onions and olives and place in small bowl. Crumble feta into very small pieces add to bowl and mix well.
3.Fill tomatoes with mixture and serve cold.
Turn them into a Redskins party appetizer by serving them on a gold plate as shown.
