Healthy Tips: Red Pepper Chickpea Wrap

Whether you call them chickpeas or garbanzo beans, the exceptional nutritional value remains the same.  Chickpeas are a non-meat protein source packed full of fiber, vitamins, minerals and low in fat.  Research has shown that including at least ¾ cups of chickpeas in your diet each day can help lower LDC cholesterol levels.  Also, because of its high protein and fiber content, chickpeas are excellent at satisfying hunger.  There’s no doubt that adding chickpeas into your diet is both healthful and delicious.


1 15 oz can chickpeas, rinsed and drained
1/2 red bell pepper
1/2 medium onion
1 stalk of celery
2-3 tablespoons low fat mayonnaise
1 tablespoon fresh dill (or ½ tablespoon of dried dill)
Salt and pepper (to taste)
1 tomato
2 cups of your favorite greens or baby spinach
4 whole-wheat tortillas


1. Dice Red bell pepper, onion and celery and toss into bowl.  Add chickpeas, dill and mayonnaise.  Mix well and season with salt and pepper to taste. 


2. Start making your wrap.  Place a half of cup of spinach and a slice of tomato on tortilla.  Then top it with a few spoonfuls of your chickpea mixture.

3. Fold tortilla into a wrap and enjoy.

Makes 4-6 wraps. YUM!
