Buffalo Wonder Bites: A Healthy Buffalo-Wing Alternative for your next Football Party!

Sports and buffalo wings go together like pants and zippers.  The only problem is that too many wings can often cause an expanded waistline and a zipper malfunction. 

If this is a danger in your house, tryout our healthy Buffalo wing makeover recipe.  Yes, you’ll miss out on a little grease, but at least your zipper will have a smoother ride up to meet your button!

INGREDIENTS
3 boneless, skinless chicken thighs, cut into 1-inch cubes
1 cup Italian dressing
4 tablespoons hot sauce
1 tablespoon butter or margarine
1 tablespoon Cajun seasoning
 
SIDES
3 ribs of celery, sliced into quarters
1 cup mini carrots
Low-fat blue cheese or ranch dressing

DIRECTIONS

1. Combine Italian dressing, 2 tablespoons of hot sauce and Cajun seasoning in a bowl.  Add diced chicken and mix well.  Marinate mixture in the refrigerator for 30-60 minutes.

2. Preheat the oven to 400°F. Line a baking sheet with foil and spray with non-stick cooking oil.

3. Remove mixture from refrigerator. Gently drain all excess Italian marinade from bowl.  Arrange chicken in one layer on baking sheet. Bake for 15 minutes, or until fully cooked.

4. While the chicken is baking, in a small microwavable bowl, melt the butter.  Then add the remaining 2 tablespoons of hot sauce and mix well with a small spoon.

5. Once the chicken bites are finished cooking, place them into a clean bowl and pour the hot sauce mixture overtop.  Mix well, making sure all chicken pieces are coated.

6. Serve bites on a platter with celery, baby carrots and low-fat blue dressing on the side.

And voila, add a little Redskins touch and you're ready to serve at your next football party or tailgate. Enjoy!
