We at Dinner Matters hope you had a fun and flavorful Thanksgiving! It's always hard during the holidays to watch everything you eat, and it's especially hard on Thanksgiving Day. If you're like us, you probably enjoyed a bit too much turkey, a bit too much stuffing, and more than a bit too much pumpkin pie.
Getting back to healthy eating doesn't have to mean a letdown in taste though. Our Grilled Rosemary, Garlic & Lemon Chicken is a delicious dish that is simple to make and won't add inches to your waistline. Keep this recipe handy--you might need it again the week after your next holiday dinner!
Grilled Rosemary, Garlic & Lemon Chicken
4 boneless skinless chicken breasts
2 tbsp of lemon zest
2 tbsp of rosemary
2 or 3 garlic cloves
2 tbsp of parsley
Salt and pepper
Put rosemary, lemon zest, garlic, and parsley in a food processor, and blend with a little olive oil until you have a medium thick paste.
Place chicken in a re-sealable bag, add mixture and coat evenly. Marinate the chicken for approximately 30 minutes.
Preheat your grill to medium high. Remove chicken from bag, and grill for 5-6 minutes per side.
