When you hear Carolina, you think barbeque, right?
Well, here at Dinner Matters, when we hear Carolina we think…barbeque too! We love a good pig pickin’, slow cooked flavors, and meat falling off the bone. But, we also love the lighter side of barbeque, something packed with flavor, and easy to do.
Our Mesquite Grilled Salmon fits the bill. Four simple ingredients and five easy steps. We like to pair this with brown rice and French green beans to keep it healthy all the way through!
Mesquite Grilled Salmon
Ingredients:
4 6oz salmon filets
Mesquite seasoning
Salt and pepper
Grape seed oil or cooking spray
Preparation:
Preheat grill to medium. Oil grill with grape seed oil or cooking spray.
Rub flesh side of salmon with mesquite seasoning and salt & pepper to taste.
Place gently on grill, flesh side down, and cook for 5 minutes.
Flip salmon over and cook for another 5 minutes, or until almost cooked through. Remove from grill and let rest for 5 minutes.
