Hey Women of Washington Redskins!
Well, we all know it’s that time of year: we’re getting up early to hit the gym, counting calories, and just taking extra steps to make up for those holiday feasts. The bottom line is; we strive to make changes in our lifestyle to ensure a healthier, HAPPIER new year.
For my New Year’s resolution, when I’m not training in the studio, I’ve rejuvenated my passion for cooking and definitely made a greater effort to cook well-balanced meals. However, as we all know, it’s not always easy finding time between family, work, and the rest of life’s busy moments to prepare a square meal.
Here’s a great recipe for Greek Orzo Salad that I love to whip up when I’m on a time crunch. I usually have enough for left-overs which can be wrapped in a whole wheat tortilla with a spread of my favorite Cava Tzatziki. So here’s to a fantastic new year and a new, healthier you!
Greek Orzo Salad
Ingredients:
1 bag baby spinach
1 c. orzo
1 tomato
1 yellow pepper
1 orange pepper
Black olives
1 c. feta cheese
Olive oil, salt, pepper, basil, and oregano (to taste)
Method:
1. Dice tomato, yellow pepper, and orange pepper. Toss evenly into spinach with black olives.
2. Bring a pot of water to a boil and add orzo. Cook for 8-10 minutes and drain.
3. Add warm orzo and feta cheese to salad and toss evenly.
4. Drizzle olive oil
5. Add salt, pepper, basil, and oregano
